Snacks from India

The first picture has two snack items. One is the yellow dhokla,a steamed Indian snack made of fermented lentils and the other is a hard pastry stuffed with a mixture of ground spiced lentils (dal)and coconut, decorated with coriander. These are typical Gujarati snacks.

This a close-up of the dhoklas which are ready to be sold at a sweetshop. They are a variation of the traditional snack, in the sense that there is an idli layer at the bottom. Inbetween the white idli layer and the dhokla layer there is a thin layer of red chutney, making this a dhokla sandwhich. The dhoklas to the right of the image are covered with a thin plastic. In the background are some empty paper cartons to pack the food items. The dhoklas are dressed with chopped coriander and grated coconut.

The photo below is of a potato fried snack, very popular in Maharashtra, India. It is made by deep frying a mixture of potato and spices with a coating of besan. Besan is a lentil paste. Fresh coriander and onions are also used in the mixture. It is served with spicy lasun (garlic) chutney. The chutney can be seen to the left of the image.
